Xoriguer (pronounced sho-ri-gair) is the same today as it always has been. It is the result of distillation in traditional copper stills, using high quality wine alcohol and carefully selected juniper berries, which come from the neighbouring Mediterranean mountains, together with aromatic herbs. These herbs are the jealousy guarded 'secret' of the liquor's original bouquet. Only the heirs of family know the identity and proportion of this valuable ingredient, which is added behind closed doors and without witnesses, at the start of each distilling. The respect for tradition is such that the fuel still used today in the distillation is wood. The distillation begins when the vapours which are produced in the still's boiler circulate through copper pipes until they reach a coil, where they condense, forming a precious liquid that drips into jars. An expert tastes the liquid at intervals to determine the pecise moment when the distillation is complete. Once this is accomplished the gin is stored in large oak barrels, where it retains unchanging its colour, flavour and aroma, until finally it is bottled. Xoriguer, thanks to its unique character and to its distillation from natural products, is free of any unwanted additives which could impair its preservation or spoil any kind of cocktail or mixed drink.

Measured to 40 proof for optimum taste, Black Zephyr is a perfect start for a cold, clean martini. Chicago Beverage Institute 2008 - Gold Medal. Distillation Method - Zephyr is a premium London Dry Gin produced by re-distilling neutral grain spirit with natural botanicals such as juniper berries, citrus peel, and coriander seeds but also elderflower & elderberry. Elderflower is a powerful botanical & requires special attention during the production process. Zephyr, produced in small batches in a 60 year old copper pot still called Constance (Connie) & named after their head distillers' mother. All the selected ingredients are heated in a copper pot still so that the flavours and aromas are released into the spirit vapour giving Zephyr its unique flavour & character. The resulting spirit is then blended to produce high strength gin of about 94% ABV. It is then reduced in strength prior to bottling. The Blu uses the same base as Black with an added 'natural' blue colour and a natural elderberry infusion (added after distillation).

This Genever is a special recipe by Patrick van Zuidam. The mash is made from equal parts of rye, corn and malted barley and is distilled three times after fermentation. It is then distilled again with a new blend of botanicals. In this blend feature among Juniper and liquorice various other aromatic herbs and spices. This results in this Genever with its characteristic mild flavour and gentle mouth feel. A very refined genever distilled according to ancient traditions and craftsmanship. Zuidam Korenwijn 1 year old is more delicate than Genever. Although it is distilled from the same selection of Malted Barley, Rye and Corn it is more fruity because of its quadruple distillation. The mash of these grains is distilled four times in a pot still after a week of fermentation. This gives this Korenwijn a light and delicate base for the botanicals. The botanicals that are used in this Korenwijn are Juniper, Liquorice root and Aniseed among several others. The Korenwijn has been aged in small oak barrels for a minimum of 12 months. This results in a really smooth mouth feel as well as delicate vanilla flavours from the wood.
